Katsu-ika (fresh squid)

Live squids landed at the port of Kasumi are sliced to be served fresh. Almost transparent beautiful squid slices are pleasantly chewy and get sweeter as you chew them. Remaining geso (squid arms) are served as tempura (fritter) or salt-grilled dishes. You can enjoy these port-town-only dishes at inns and hotels in the town. (Season: June to late August; Reservation required)
